A super simple, light and refreshing belgian endive and apple salad! With creaminess from goat cheese and zing from vinegar and shallot.
Ingredients
4 heads Belgian endive, outer leaves removed, then halved
2 fuji apples, sliced, then halved
1 cup walnuts
½ cup crumbled goat cheese
2 teaspoons white wine vinegar
2 teaspoons olive oil
1 teaspoon fresh lemon juice
1 teaspoon minced shallot
salt and pepper
fresh parsley
