Blissful Summer Salad
Greens with radishes, cucumbers, fava beans, and quinoa tossed in a refreshing mint dressing, perfect for the summer.
1/2 cup quinoa, uncooked – if you are using pre-made quinoa, you need 1 cup cooked for this salad
1 cup watercress, washed and drained
1 1/2 arugula, washed and drained
1 small cucumber (around 1/2 a cup), chopped
1 cup fava beans
2 large radishes – I used easter egg radishes
2 teaspoons olive oil
Mint Dressing:
1/2 cup olive oil
1/2 cup mint leaves
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
2 1/2 teaspoons maple syrup
1/2 teaspoon salt
For the Hemp Tomatoes:
1/2 cup cherry tomatoes
1-2 tomatoes
1 tablespoon hemp seeds
1 teaspoon olive oil
generous pinch of salt
