This breakfast burrito with sweet potatoes, peppers and guacamole is a stick to your ribs kinda breakfast! Make extra and freeze for later.
Ingredients
3 medium sweet potatoes
3 tablespoons olive oil, divided
1/2 yellow or red onion, peeled and chopped
1 red pepper, stemmed, seeded and chopped
1 jalapeno, stemmed, seeded and minced
8 eggs, beaten
8 burrito sized tortillas
1 cup guacamole
Salsa
Fresh cilantro
Crumbled goat cheese
