A fall-inspired salad with honey sweet Ambrosia apples, crisp Brussels sprout leaves, smoky tempeh bacon and toasted walnuts!
Ingredients
Bacon:
8 ounce organic tempeh
1/4 cup soy sauce or tamari
2 tablespoons apple cider vinegar
1 teaspoon molasses
1/2 teaspoon cumin
1/2 teaspoon chili powder
1-2 teaspoons extra virgin olive oil
Salad:
1 lb Brussels sprouts
2 large Ambrosia apples
1/3 cup pecans, chopped and toasted
Dressing:
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons honey
1 teaspoon dijon mustard
