Cheesy Choux Fritter with Onion

Oozy, cheesy fritters made with whole wheat choux pastry, flavoured with red onion, fresh basil and garlic with chunks of melted cheese.
Ingredients
60g butter
270g water
150g whole wheat flour
3 large eggs
1 small red onion, finely chopped
2 large handfuls fresh basil, roughly chopped
2 cloves garlic, crushed
2 heaped teaspoons Dijon mustard
30g ‘Parmesan’, finely grated
100g melty cheese (I used a Spanish sheep cheese), cubed
1 teaspoon sea salt, or to taste
lots of freshly ground black pepper
1 litre frying oil, I used sunflower
