Chickpea Cucumber Mini Pita Pizzas
A fun, fresh, filling vegetarian toaster oven recipe perfect for kids and adults. Less than 500 calories and piled high with veggies.
4 mini whole wheat pitas
1 medium English cucumber, spiraled or thinly sliced
10 grape tomatoes sliced
Chickpea Spread:
1 cup cooked chickpeas (aka garbanzo beans)
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon granulated garlic
1/8 teaspoon fine grain sea salt
Pinch of black pepper
1/8 teaspoon red pepper flakes (optional)
1/4 cup fresh parsley (with most of the stems removed)
2 teaspoons olive oil (use more for desired consistency)
Yogurt Sauce:
1/2 cup non-fat plain Greek yogurt
1/4 teaspoon fine grain sea salt
1/4 teaspoon black pepper
1/4 teaspoon dried dill weed
1 tablespoon olive oil
4 tablespoons lemon juice
