Coconut-Lime Bread

An easy recipe for coconut-lime quick bread.

For the Bread:
2 eggs
1 1/4 cups milk (I used whole milk)
1 tsp. vanilla extract
Grated zest from 2 1/2 limes
2 1/2 cups all-purpose flour (I used King Arthur Flour)
1 1/2 cups sweetened flaked coconut
1 cup sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
6 tablespoons unsalted butter, melted and cooled

For the Lime Glaze:
1 cup confectioners sugar
2-3 tablespoons fresh lime juice
Grated zest from 1/2 lime
