Creamy Pumpkin Pasta
Today’s oh-so-seasonal pumpkin pasta is a super creamy, healthy comfort food with mild Italian flavors which allow the pumpkin to stand out and be the star of your pasta dish. And it’s ready in 20-25 minutes.
500g dry pasta, preferably whole-wheat (or a gluten-free alternative)
2 cans (850g) pure pumpkin puree, or 30 ounces (850g) roasted pumpkin of choice, processed until smooth
1/2 -1 cup (120-240ml) rice cream or other cream of choice, depending on desired thickness (I like my pasta sauce very thick, so I add 1/2 cup only )
1 teaspoon olive oil
3 cloves garlic, minced
1 tablespoon chopped basil (1.5 teaspoons dried would also work)
1 teaspoon salt
1 batch healthy “Parmesan” to serve
