Ingredients
500ml water
100ml milk of your choice
250 g polenta (instant polenta)
50 g Parmesan cheese, grated
1 Tbsp olive oil
70 g baby spinach
200g mushrooms
2 garlic cloves
1 Tbsp rapeseed oil/ghee for sautéing
1 pinch of salt
pepper, to taste
a bunch of parsley
½ lemon, juice
