This crazy easy, healthy tomato basil soup is made “creamy” with almond (or other non-dairy) milk of your choice and hemp seeds add a nice boost of protein. This dish is the definition of healthy fall comfort food; warming, packed with vitamin C (which fights colds!) and classically delicious.
Ingredients
⅔ cup almond milk
13.5 ounce can plain, all-natural tomato purée
1 shallot, halved and thinly sliced
¼ cup chopped basil
1 clove garlic, peeled and minced
2 tablespoons hemp seeds
1 tablespoon olive or coconut oil
Large pinch hot pepper seeds
Salt and pepper, to taste
