Creamy vegetable soup

Carrots, broccoli, potatoes and corn meet in a delicious, creamy soup. One of my personal favourites!
Ingredients
1 yellow onion, diced
2 garlic cloves, roughly chopped and crushed
1 big carrot, sliced or cut in chunks then sliced lengthwise
1 big potato, diced
a handful of broccoli florets
the kernels of 1 corncob (or a small tin of corn)
2 tbsp flour (or corn starch for GF version)
600 ml soy milk (use rice milk for soy-free version)
300 ml vegetable stock
vegetable oil
salt, pepper, sliced green onions and grated cheddar (optional) to serve
