Ingredients
1 large eggplant, peeled and cut into 1/2 inch dices
1/2 tsp salt
1 cup all-purpose flour
2 eggs
1 Tbsp water
1 1/2 cups whole-grain Italian seasoned bread crumbs
3/4 cup shredded parmesan cheese
4 Tbsp canola oil (or a high heat oil)
