Fall Harvest Quinoa Salad

This light salad is the perfect weeknight meal or side dish. It’s filled with quinoa, butternut squash, Brussels sprouts, apples and cranberries.
Ingredients
1 1/4 cups (225g) uncooked quinoa
2 cups (235ml) water
2 pounds (900g) butternut squash
5 tablespoons olive oil, divided
salt
1/2 medium red onion, diced
8 ounces (225g) Brussels sprouts
4 tablespoons lemon juice, divided
1/2 teaspoon paprika
1 medium apple (I used a braeburn apple)
1/2 cup (75g) crumbled feta
1/3 cup (40g) dried cranberries
1/3 cup (10g) chopped parsley
