This Fresh Corn and Mango Salad is great as a side dish or as a snack with tortilla chips.
Ingredients
2 ears fresh corn, husks and silks removed
2 mangos, peeled, pitted and diced
1/2 yellow bell pepper, diced
1/2 orange bell pepper, diced
1/2 red onion, diced
1 cup cherry tomatoes, halved
1 red chile, minced
1/2 cup chopped fresh cilantro
2 tablespoons rice vinegar
2 tablespoons fresh lime juice
Grated zest from 2 limes
1 tablespoon extra-virgin olive oil
Kosher salt, to taste
