Crispy fried egg on artisan toast with arugula, feta cheese, and a drizzle of homemade herb oil.

Ingredients

2 tbsp chopped fresh curly parsley (or basil)
¼ cup extra virgin olive oil
2 thick slices of your favourite bakery bread
2 crispy fried eggs
1 cup arugula
¼ cup feta cheese
Salt and pepper
