Greek Couscous Salad-Delicious blend of fresh ingredients perfect for a side dish or lunch. Perfectly cooked whole wheat couscous, fresh tomatoes, cucumber, onion, & herbs mixed with a light vinaigrette.

Ingredients

¾ Cup Israeli Whole Wheat Couscous
1 Cup Low Sodium Vegetable Broth
2 Cup Diced Roma Tomatoes
1 Cup Diced Cucumber
¼ Cup Chopped Red Onion
¼ Cup Diced Fresh Dill
¼ Cup Chopped Parsley
Juice of Half Lemon
2 Tablespoons Olive Oil
1 ½ Tablespoon Balsamic Vinegar
Pinch of Salt
Pinch of Fresh Cracked Pepper
¼ Cup Fat Free Feta Cheese
