Grilled Grean Bean and Apple Salad with a slightly sweetened maple syrup dressing. A great side dish for Fall that is vegan and gluten free!
Ingredients
For the Dressing:
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tsp. Dijon mustard
1 tsp. maple syrup
1/8 tsp. salt
1/8 tsp. black pepper
For the Salad:
1 lb green beans, trimmed
2 apples, cut into wedges
2 tablespoons extra-virgin olive oil
Juice from 1 lemon
1/4 tsp. salt
1/4 tsp. black pepper
4 radishes, trimmed and thinly sliced
2 scallions, white and light green parts thinly sliced
1/4 cup sliced almonds
