1 15 oz can white (cannellini) beans
3 eggs
¼ c. applesauce
½ t. powdered stevia extract
2 t. vanilla
4 T. + 2 t. honey
3 T. coconut oil
¼ c. coconut flour, sifted twice
½ t. baking soda
1 t. baking powder
1 lb fresh (or defrosted) strawberries, de-stemmed and cleaned
coconut whipped cream, for serving
fresh mint, optional
