Ingredients
1½ cups arborio rice
4 cups (1 quart) low sodium vegetable or chicken stock
½ cup white wine
1 medium shallot, finely chopped
2 Tbsp unsalted butter
1 Tbsp olive oil + more for drizzling on top
¼ cup grated Parmesan cheese
1 Tbsp chopped Italian parsley
Kosher salt, to taste
pepper (I used Aleppo pepper)
fresh herbs, your choice
