Homemade Vegan Kebab

Kebabs have never been so healthy! A homemade vegan kebab, with a healthy salad and seitan filling, topped off with a tasty soy yoghurt sauce.
Ingredients
2 wholewheat flatbreads
Handful of mixed salad leaves
1 carrot, peeled and grated
40g red cabbage, finely sliced
1 tomato, sliced
1 ball of seitan – shop-bought or homemade
1 tbsp extra virgin olive oil
Yoghurt sauce:
1 soy yoghurt (unsweetened)
1 clove garlic, finely diced
1 tsp parsley, finely chopped
1 pinch of salt
