Jamaican Jerk Tofu Stir Fry
This easy 30-minute dish packs the spicy punch!
Jamaican Jerk Sauce:
2 to 3 habanero peppers, seeded and ribs removed
4 stalks of green onions, roughly chopped
2 TBS fresh thyme (or 1 TBS dried thyme)
1-inch piece of ginger, peeled and sliced
3 cloves garlic
2½ TBS olive oil
3 TBS lime juice (about 1 to 2 limes)
2 TBS apple cider vinegar
1½ TBS dark muscovado sugar (or dark brown sugar)
½ to 1 TBS tomato paste, depending on your taste
1½ tsp ground allspice
1 tsp kosher salt
1 tsp freshly ground pepper
Tofu
one 12-oz package of extra firm tofu
4 to 5 TBS cornstarch
1 TBS sesame oil
Vegetable Stir Fry
1 TBS olive oil
½ medium yellow onion, sliced
1 medium red pepper, seeded and sliced
2 cups snow peas (about ½ lb / 225g)
1 stalk of green onion, sliced
pinch of salt
