Kale Salad with Fried Tofu & Miso Ginger Dressing
A light healthy kale salad with a miso ginger dressing – perfect as a meal or an appetizer!
Salad:
1 bunch of kale, stemmed and chopped (I used lacinato or dino kale)
½ large avocado, mashed
1 large carrot, peeled and julienned
1 cup (85g) sliced red cabbage
1 medium red pepper, sliced
2 green onions, chopped
sesame seeds for garnish (optional)
Miso Ginger Dressing:
3 TBS olive oil
¼ cup (60ml) rice vinegar
1½ TBS white miso paste
1½ TBS coconut aminos
½ TBS maple syrup (or sweetener of choice)
1½ tsp sesame oil
½ tsp freshly grated ginger
¼ tsp granulated garlic (or a minced clove of garlic)
salt to taste
Fried Tofu:
1 12-oz package of extra firm tofu
2 TBS olive oil
salt and pepper to taste
