Mexican quinoa, black bean and avocado mix
Fluffy quinoa combined with traditional Mexican ingredients such as black beans, corn, spices, lime juice and avocado. This dish tastes delicious on its own as a healthy, high-protein salad or served with sour cream and salsa in tacos.
1 onion, finely chopped
3 cloves garlic, finely chopped
1 red hot chilli pepper
10 chopped cherry tomatoes
500ml vegetable broth in boiling hot water
250g quinoa, rinsed
1 can black beans, drained
1 can sweetcorn (corn), drained
1 teaspoon chilli (chili) powder
1 teaspoon cayenne pepper
1/2 teaspoon cumin
Salt and pepper to taste
1 avocado, peeled, de-seeded and chopped
Juice of one lime
Fistful of fresh, finely chopped parsley
