Dinner doesn’t get much easier than this simple pasta salad with tomatoes, basil, fresh ricotta cheese, and pine nuts!
8 ounces pasta (regular or gluten-free)
2 cups cherry or grape tomatoes, halved
1/2 cup chopped fresh basil
1 tablespoon extra virgin olive oil
1/4 cup ricotta cheese
1/4 cup pine nuts
salt and freshly ground black pepper to taste
