A ‘Posh Brunch’ of poached eggs on brioche toast, with white beans and wild mushrooms with créme fraiche and wholegrain mustard. An effortless but elegant vegetarian brunch!
Ingredients
15g butter
100g wild mushrooms
½ of a 400g tin white beans (I used haricot) – drained and rinsed
2 tbsp low fat créme fraiche
2 tsp wholegrain mustard
Handful baby spinach
2 slices brioche
2 eggs
