Light and divine pumpkin Greek yogurt bites with a caramel drizzle.
Ingredients
FILLING:
1 can (15 oz) (425 g) pumpkin puree
1 cup (227 g) nonfat Greek yogurt
1 package (3.5 oz) (99 g) butterscotch pudding (the cook & serve variety)
⅛ tsp (.5 g) ground nutmeg
½ tsp (1 g) ground ginger
1 tsp (2.5 g) cinnamon
⅛ tsp (.5 g) ground cloves
(or sub spices for 2 tsp (4.5 g) pumpkin spice)
CRUST:
2 cups (300 g) gingersnap cookie crumbs
4 Tbsp (60 g) butter, melted
TOPPING:
2 to 4 Tbsp caramel sauce (or enough to thoroughly drizzle!)
