Purple Beetroot Pasta – Ready in 25 Mins

Beetroot Pasta. The beets are bangin’ in this eye-catching dish. Highly nutritious, beetroots are an awesome addition to any pasta meal – including this beauty!
Ingredients
7oz pasta (7 oz = 200g)
1 tbsp olive oil
1 tbsp white wine vinegar
1 handful of walnuts
1 onion
1 clove garlic
2 tsp sage, fresh if possible (or rosemary)
1 big precooked beetroot or a couple of small ones
1/2 cup feta cheese (½ cup = 50g)
1 handful arugula (1 handful = 50g)
1 lemon, sliced
Salt and pepper to taste
Optional (but awesome, to make the pasta purple):
¼ cup beet juice (¼ cup = 70ml)
