Quick and Easy Chana Masala

Cook time: 15 minutes
Total time: 20 minutes
Serves: 4

This quick and easy version of the popular Indian dish Chana Masala, requires just one pan and about 20 min. Vegan, clean eating and GF

Ingredients

1 Tablespoon coconut oil or olive oil
3 cloves garlic, smashed
2 dried red chiles, roughly broken into pieces (adjust to taste) (or 1 Serano green chili,minced)
2 tsp garam masala
2 tsp coriander seeds
2 tsp cumin seeds
1 tsp ground ginger
1 tsp ground turmeric
1 large yellow onion, finely chopped
2 cans (15oz) chickpeas, drained and rinsed
2 large tomatoes, finely chopped
2 Tablespoons fresh lemon juice
6 cups loosely packed fresh spinach leaves
sea salt, to taste
