Quinoa and Steel Cut Porridge with Sautéed Apples

Cook time: 10 min
Total time: 8 hours 10 min
Serves: 2 

This quinoa and steel cut porridge is soaked overnight and topped with sauteed apples in the morning – a fast & healthy breakfast ready in just 10 minutes!

Ingredients

¼ cup steel cut oats, dry
¼ cup quinoa, dry
2 tbsp raisins
½ tsp cinnamon
Pinch of salt
2 cups water
¼ cup milk
1 tsp coconut oil or butter
1 apple, sliced (I like using a sweeter apple, like Golden Delicious)
¼ tsp cinnamon, or more to taste
Squeeze of lemon juice
2 tbsp water
2 tbsp sliced almonds, toasted
Other toppings (optional): nuts/seeds, shredded coconut, nut butter, maple syrup, dried fruit
