Salad:
1⅓ cups (250g) quinoa
2 cups (500ml) vegetable broth
8 medium-sized tomatoes, skinned, deseeded and cubed
2 small avocados, cubed
½ cup (70g) pine nuts, toasted
Handful of basil, finely chopped
Dressing:
4 tablespoons (60ml) olive oil
Juice of 1 lemon
½ teaspoon salt
Pepper to taste
