Red Curry Quinoa
Got leftover curry paste or coconut milk from another recipe? Use it to make this red curry quinoa! It’s a very simple dish and you can pair it with your favorite protein and vegetables!
Red Curry Quinoa
2 tablespoons olive oil
2/3 cup chopped shallots
2 cloves garlic, minced
2 teaspoons minced ginger
3/4 teaspoon kosher salt
1 1/2 tablespoons red curry paste
4 cups cooked quinoa
1/2 cup coconut milk
2 tablespoons lime juice
1 stalk of scallions, sliced
a few tablespoons of chopped thai basil (optional)
Honey Chili Tofu Stir Fry
12 to 14-ounce package of extra firm tofu
2 1/2 tablespoons olive oil
1/2 pound green beans, trimmed
1 medium red bell pepper, sliced into strips
1 teaspoon kosher salt
1 1/2 tablespoons honey chili sauce
