Ingredients
Quinoa Salad
3 cups quinoa
4 cups water
2 cups cucumbers, peeled, seeded and diced
1 cup dried cherries
3/4 cup crumbled feta
1 bunch cilantro, chopped
1/4 cup mint, chopped
Lime Dressing
2 limes, juice and zested
6 tablespoons extra virgin olive oil
1 tablespoon honey
salt and pepper to taste
