Roasted Butternut Chickpea Wraps
Spicy, savory, wintery flavor is all wrapped up in a warm, homemade flatbread with these Roasted Butternut Chickpea Hummus Wraps. Quick winter weeknight dinners never tasted so good!
Filling:
1 Tbsp butter + 1 Tbsp olive oil (or 2 Tbsp olive oil for dairy-free option)
2 medium yellow onions, thinly sliced
½ medium butternut squash, peeled and cubed (about 2 cups, 300 g)
1 15-oz (425 g) can chickpeas, drained and patted dry
3 Tbsp (45 mL) olive oil
1 Tbsp (15 mL) soy sauce
1 Tbsp (15 mL) sriracha
2 tsp (10 mL) maple syrup
1 tsp smoked paprika
¼ tsp each salt and pepper
Sauce:
½ cup (120 g) hummus
2 tsp (10 mL) lemon juice
2 cloves garlic, minced
Water to thin
