A beautiful and simple salad topped with quinoa, avocado, orange ginger roasted carrots, and soy-miso dressing.
Ingredients
1 cup quinoa
1 lb carrots
Juice and zest of 1 orange
1-2 teaspoons coconut oil, melted
1/2 teaspoon freshly grated ginger
2 tablespoons miso paste (I used red miso)
2 tablespoons sesame oil
1 tablespoon soy sauce
Microgreens (I used arugula)
2 avocados, peeled and sliced
Sesame seeds
