Roasted cherry tomatoes and pesto pasta
Probably the easiest and most delicious pasta recipe I’ve made so far! Roast some cherry tomatoes while your pasta cooks, toss with pesto and voilà, dinner is ready!
approx. 20 cherry tomatoes
200g dry pasta (I like linguine best for this recipe, but spaghetti or penne woks well too, or even trofie if you can find them. Use GF if needed)
2 tbsp pesto (storebought or homemade, but be aware that storebought pesto often contains cheese and nuts, so make your own for a vegan/nut-free version)
vegan parmesan, to serve, optional
Vegan Pesto :
2 handfuls fresh basil leaves
2 tbsp pine nuts or sunflower seeds (nut-free option), or chopped almonds or cashews
1/2 clove garlic
1 pinch salt
good quality olive oil (at least 2 tbsp)
