Ingredients
For the Salad:
3 delicata squash
2 tablespoons extra-virgin olive oil
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cardamom
1/4 tsp. red pepper flakes
1/2 cup goat cheese, crumbled
1/3 cup fresh cilantro leaves
Arils from 1/2 pomegranate
For the Pomegranate-Balsamic Dressing:
1/2 cup pomegranate juice (I used POM Wonderful)
1/4 cup balsamic vinegar
1 tablespoon maple syrup (Grade B if possible)
