A variety of roasted vegetables in corn tortillas topped with avocado cream and goat cheese
Ingredients
Roasted Veggies:
1 small zucchini, diced
1 small squash, diced
1/2 medium red onion, diced
1 ear sweet corn, removed from cob
1 cup cherry tomatoes, sliced in half
1 medium red pepper, diced
2 tbsp. olive oil
2 cloves garlic, minced
2 tsp. cumin
1/4 tsp. salt
Avocado Cream:
1 ripe avocado
1/3 cup plain Greek yogurt (full fat or fat free)
1/4 cup cilantro
1 tbsp. lime juice
Tacos & Garnish:
corn tortillas
goat cheese
cilantro
