Shakshuka, or poached eggs in spicy, tomato sauce is a great dish during the colder months of the year. It can also be a quick lunch or even dinner, with a salad on the side.
Ingredients
1 1/2 tablespoons olive oil
1 small red onion, thinly sliced
1 large red paprika, thinly sliced
2 garlic cloves, crushed
1/4 teaspoon dried chilli flakes (optional)
400g can plum tomatoes, roughly diced
4 eggs, large
2 teaspoons sweet paprika
2 teaspoons ground cumin
1/2 teaspoon ground coriander
fresh coriander to garnish
