A rich and hardy meal of creamy barley and mushrooms… yum!
Ingredients
¼ sweet onion, chopped
2 cloves garlic, minced
3 tbsp water
1 pound baby portabella mushrooms
1 cup barley
3 cups vegetable broth
1 cup vegan milk of choice (I used oat milk!)
¼ cup nutritional yeast
2 tbsp shoyu or tamari
1 tsp salt
1 tsp pepper
