Very easy, and very tasty, this quinoa, grilled zucchini and egg salad is perfect for your next picnic. The flavours are simple and summer-y, with lots of parsley for freshness and a Dijon and dill dressing for a bit of tang. You can easily double or triple the recipe to serve a big crowd.
Ingredients
60 g (a bit less than a cup) uncooked quinoa
1 medium zucchini
2 eggs
1 bunch parsley
a drizzle of lemon juice
Sauce :
1/2 tsp Dijon mustard
2 tsp apple cider vinegar
5 tsp olive oil
a pinch of dried dill leaves
salt and pepper to taste
