Simple Vegan Quinoa Fried Rice

Vegan Quinoa Fried Rice is the healthy and easy alternative to the takeout classic, featuring flavorful vegetables and protein-packed quinoa

Ingredients

1/2 cup quinoa (makes 2 cups cooked)
1 tablespoon olive oil (or peanut oil if you have it)
2 large carrots
1 small head broccoli
1 clove garlic
1 teaspoon red pepper flakes
1 1/2 tablespoons soy sauce
2 teaspoons rice wine vinegar
2 teaspoons sesame oil
chopped green onion and/or basil to garnish
your favorite hot sauce to serve
