Southwest Black Bean Burgers
This veggie burger recipe is stuffed with quinoa, black beans, red pepper, sweet potato, onions, bread crumbs and spices. All of this is seasoned with cumin, coriander and chili powder to create a black bean burger with southwestern flair.
1 tablespoon olive oil
1 cup yellow onion, finely diced
1 red pepper finely diced
2 large garlic cloves, minced
1 tablespoon tomato paste
1 teaspoon ground cumin
2 tsp ground coriander
1 teaspoon ground chili powder
½ cup uncooked quinoa, rinsed well in a fine mesh colander
1 cup water
1 (15 ounce) can black beans, drained and rinsed
1 cup mashed sweet potato
½ cup panko bread crumbs
½ teaspoon salt, to taste
Freshly ground black pepper, to taste
2 avocados, sliced
