Spiced Apple Oat Scones
Spiced apple oat scones made gluten-free. Perfect for a fall brunch.
2 cups gluten-free all-purpose flour (or regular all-purpose flour of choice–white spelt, white whole wheat pastry, and half white/half whole wheat flour would all be fine)
¼ cup arrowroot starch flour
1 cup + 2 tbsp rolled oats, divided (gluten-free, if necessary)
1 tbsp baking powder
1 tsp baking soda
1 tsp xanthan gum (optional; they will hold together slightly better with, but work well without–the recipe pictured is gum-free)
½ tsp sea salt
2 tsp ground cinnamon
½ tsp ground cardamom
¼ tsp ground nutmeg
Pinch ground cloves
2 tbsp coconut sugar or coarse granulated sugar of choice, for sprinkling (optional)
Wet:
½ cup coconut oil
⅓ cup honey (or maple syrup for vegan)
¼ cup water
1 tsp apple cider vinegar
½ tsp almond extract
2 apples, peel intact, diced into small pieces
