Ingredients
1/2 a medium-sized onion, chopped
4 cloves garlic, sliced
1-inch knob of ginger, grated
1 tbsp coconut oil
1 tbsp gluten-free tamari or gluten-free soy sauce
1 tsp cumin
1 tsp turmeric
1/4 tsp cayenne pepper
1 heaping cup of mushrooms (I used crimini and white button), sliced
1/2 a bell pepper, chopped
2 large heads of baby bok choy, ends trimmed and sliced lengthwise
