Showcase the power of two vegetarian superfoods in these spinach and quinoa patties. Perfect for snacks, lunches or dinner!

Ingredients

3 cups cooked quinoa (for extra flavor, cook in vegetable broth)
3 eggs
1/2 teaspoon salt
2 tablespoons minced parsley
2 cloves garlic, minced
1 large carrot, peeled and shredded
4 green onions, diced
1 cup frozen, chopped spinach, thawed, and squeezed dry
1/2 cup grated Parmesan cheese (optional)
1-2 cups whole wheat panko breadcrumbs
2 tablespoons avocado or olive oil
