Split Pea Soup with Lemon & Thyme

Prep time: 5 minutes
Cook time: 50 minutes
Total time: 55 minutes
Serves: 4-6

This split pea soup with lemon and time is bolstering and hearty, and full of fresh flavour. Perfect for early Spring!

Ingredients

1 tbsp olive oil
1 large onion, diced
2 sticks celery, diced
1 garlic clove, minced
2 tsp dried thyme
3 tbsp mirin
3 cups dried green split peas
10 cups low sodium vegetable stock (or a mixture of water and stock)
juice and zest of 1 lemon
salt and pepper to taste
