Sweet Fried Plantains

Sweet Fried Plantains, Spicy Red Sauce, and a Poached Egg.

Ingredients

For Sweet Fried Plantains:
2 ripe plantains (black spots to all black)
vegetable oil (for frying)
salt & pepper

For Spicy Red Sauce:
olive oil, to coat pan
1 small onion, small diced
2 cloves of garlic, minced
2 small tomatoes, small diced
3 chipotle peppers in adobe sauce, minced (seeds, sauce and all)
dash worcestershire
salt & pepper

To Plate:
1 avocado, medium diced
queso fresco, as desired
2 eggs, poached
cilantro, to garnish
lime slices, to garnish
