Teriyaki Tofu Spring Rolls
These fresh teriyaki tofu spring rolls are filled with vegetables, herbs and sliced strawberries! They are great for a light meal. You can also double up this recipe and serve it for a party.
Teriyaki Sauce:
1/4 cup low-sodium tamari or soy sauce
3 tablespoons water
2 tablespoons mirin (Japanese cooking wine)
2 tablespoons honey
1 large clove of garlic
1 teaspoon minced ginger
1 teaspoon cornstarch
Spring Rolls:
12 ounce (340g) package of extra-firm tofu
1 1/2 tablespoons safflower oil
pinch of salt
15 sheets of 22cm rice paper wrappers
1 large red bell pepper
2 carrots
2 persian cucumbers
5 to 6 medium strawberries
1/4 cup mint leaves
1/4 cup cilantro
