Ingredients
2 tablespoons extra virgin olive oil
1 large onion, diced
6 ounces button mushrooms, diced
4 cloves garlic, minced
1 jalapeño, seeded and minced
1 pie pumpkin, peeled, seeded, and cut into bite-sized pieces
1 28-ounce can crushed tomatoes
2 14-ounce cans black beans, undrained
½ cup steel cut oats
4 tablespoons chili powder
3 tablespoons cumin
1 tablespoon dried oregano
¼ cup fine cornmeal
1 cup warm water
Salt and pepper, to taste
