Vegan chocolate and pear mousse parfaits
These vegan mousse parfait are the perfect dessert to impress your guests! Don’t be intimidated by the long ingredients list, they are very easy to make! The mousse can be prepared ahead of time and you’ll just have to dress them just before serving. Scroll down the post for the English version.
Chocolate Mousse:
5 cl aquafaba (chickpea brine) (or 1 egg white)
1 tsp light cane sugar
2 drops lemon juice
100 g good quality dark chocolate
200 g silken tofu
1-2 tsp maple syrup (to taste)
Pear Mousse:
5 cl aquafaba (or 1 egg white)
1 tsp light cane sugar
2 drops lemon juice
100 g ripe pear (raw) or canned poached pear (or frozen raspberries if you’re not into pear)
200 g silken tofu
2 tsp maple syrup
1/4 tsp vanilla powder
For the jars:
10-12 vegan biscuits (use GF if needed), homemade or store bought (or use granola or cooked crumble topping)
diced pear (or use fruit purée)
caramelised hazelnuts
